Why We Built Clave Around the Clave
Clave by Mojitos••1 min read
The clave is two sticks and a pattern, the pulse every other instrument in a Cuban band answers to. You can't always hear it on its own, but take it away and everything falls apart.
Structure you can feel
That idea runs through the whole place. A Cuban kitchen on the main floor, a historic jazz club that runs late, and rehearsal rooms with a recording studio in between. Different rooms, one rhythm.
A few staples, always
Some things never change: the mojito, the empanadas, the Cuban sandwich. Everything else rotates with the season, the way a solo moves over a familiar tune. Come back next month and the mains will have shifted; the groove won't have.
That's the promise. Real food, real jazz, and a beat underneath it all.
